In response to requests, I thought I would post the recipe for the Pride Jell-O that I made last weekend. My pride is something that I have been thinking about lately, some which relates to that frightful period in April that I thought was the end of the world. Round one went well back in May and I have a follow-up on the 23rd that has me a bit nervous, but not as bad as the first when I started getting spasms in my inner right thigh. A few weeks ago I put together a ballade supreme about the ordeal. But I thought I better hold off until it’s over.
Tomorrow is my second anniversary of turning 39. Every few years, it never fails that it falls on Father’s Day. Thankfully, it seems like the terrible rain storms are behind us. Last night I thought there was going to be a tornado touchdown. You wouldn’t believe the rotations in the clouds I saw last night. I actually got some photos of some interesting formations before the rain came down in buckets. I am absolutely surprised by how dry the basement is. The rain was a blowing rain as well and you could hear it pounding against the house. Luckily, no more downed trees from my parents’ neighbor’s yard like in years past.
This morning I woke up to find my whole first rack of clothes in my closet separated from the wall and fell. I was surprised I didn’t hear a thing given the closet door was open. I can only attribute it to the shirts actually creating a cushion as it fell from about 3′-0″ above. Not a typical height as I created two racks for clothes. Bottom rack was for short-sleeve shirts and top rack for long-sleeve shirst and pants. I’ll be heading to Homo Depot to see if there are any other “new and improved” rack systems to install.
Tonight is a luau party ALL THE WAY OUT in Elgin. It should be a fun time. Birthday tomorrow will be spent at my brother and SIL’s as we not only celebrate my birthday, but my niece’s, my father’s, and Father’s Day. And as is typical for my birthday, marking the first day of Summer, it is supposed to be sunny and hot.
Anyhoo. here’s the recipe to the Rainbow Pride Jell-O. Wiggle and jiggle it. I bought a box of Knox gelatine and didn’t realize how many envelopes came with it (32). The recipe calls for three envelopes. Anyone need any envelopes?
PRIDE JELL-O
One 6 oz. box of blue jell-o
One 6 oz. box of yellow jell-o (lemon is recommended)
One 6 oz. box of red jell-o (cherry is recommended)
Three envelopes of Knox gelatine.
To prepare:
Mix the blue Jell-O with an envelope of Knox gelatine. Pour in two cups of boiling water. Dissolve the gelatin by slowly stirring. Add 1/2 cup of ice. Stir until ice is dissolved. Pour into a 9 x 13 pan which is lightly coated with cooking spray. Let set in the refrigerator for about an hour.
Repeat with the yellow Jell-O and slowly pour (preferrably spoon – I used a 1 cup measuring cup) it over the blue layer. Make sure that you are pouring it over in various locations so as not to “melt” the blue mold underneath. Let set in the refrigerator for about an hour.
Repeat with the red Jell-O and slowly pour (preferrably spoon – I used a 1 cup measuring cup) it over the yellow layer. Make sure that you are pouring it over in various locations so as not to “melt” the yellow mold underneath. Let set in the refrigerator for about an hour.
And there you have it. Make sure that you use the Knox gelatine as that allows the Jell-O to “gel” quicker than by regular Jell-O directions, allowing quicker prep times. It also makes the Jell-O firmer so that it is a good “finger treat” when sliced and cubed.
The cooking spray I think also allows for easy separation from the pan. If you cut the Jell-O in cubes, it’s best to cut both lengthwise and crosswise BEFORE removing any cubes from the pan or some may separate and tear from the rest of the mold.
As far as how many servings this provides, I am not sure. But “if ya do the math,” you’ll get around 117 one-inch square pieces (13″ x 9″).
